NOGUCHI NAOHIKO

Known as “The God of Sake,” he has dedicated over seven decades to perfecting his craft, uniting tradition and innovation. His present brewery, the Noguchi Naohiko Sake Institute in the mountains of Ishikawa, was founded in 2017. NIIZAWA

In the Miyagi Prefecture, Niizawa stands as a symbol of resilience and renewal. Destroyed by the 2011 earthquake, it was rebuilt by Iwao-san with unwavering spirit, a rebirth that redefined its legacy. Today, under the vision of Nanami Watanabe, who became Niizawa’s Toji in 2018 at the age of 22, then the youngest female Toji in Japan, Niizawa unites heritage and innovation. Label Noir captures this harmony, a tribute to strength, elegance, and the art of Assemblage

URAKASUMI

Founded in 1724 in Shiogama, Urakasumi embodies the harmony between land and sea, tradition and innovation. Led by Saura san, one of Japan’s most iconic sake masters, the brewery is famed for its sacred sake brewed for the Shiogama Shrine and its signature Kyokai No.12 yeast. Through centuries of change, Urakasumi has remained true to its philosophy: honor the past, never fear the future. Label Orange, our Junmai Daiginjo, captures this spirit, the true essence of coastal Japan

DEWAZAKURA

In the snowy valleys of Yamagata, Dewazakura has brewed sake since 1892, where purity meets innovation. In the 1980s, they helped make Ginjo sake more widely accessible, opening an exclusive craft to the world. Guided by patience and shaped by nature, Dewazakura continues to inspire. Label Azur pays tribute to their pioneering spirit, reimagined through the art of Assemblage.
